beet popsicles

Yes, that's right, I made beet popsicles over the weekend! I mixed some homemade beet juice with a little papaya juice and voila! Beet popsicles! What I was after was getting E to eat a little more veggies than he has been willing to lately. What totally escaped these great plans was factoring in the insane mess a popsicle made with beet juice would make!!

The mess was totally worth it, because my little man LOVED them!!

And when it was eaten all up we headed straight to the bathtub!!
