so much food - zucchini brownies

Every time we go down to the garden, we walk away with TONS of food! I seriously do not even go into the produce section too much at the grocery store these days...


We have mountains of zucchini, so I have been coming up with some yummy ways to use it up.

My favorite thing so far? Brownies! Yup! - ooyie, gooey, yumminess, loaded with garden fresh zucchini.


I found some recipes online and have been playing around with them a bit. Here is what I've come up with that is making us happy:

Zucchini Brownies

1/2 cup melted butter
1 cup sugar
2 cups whole wheat flour
1/2 cup cocoa
1 1/2 teaspoons baking soda
1 teaspoon salt
2 1/2 cups shredded zuchinni

Heat oven to 350 degrees. Grease a 9 x 11" pan and "flour" with cocoa powder. Mix the butter and sugar together. In a seperate bowl, mix up the flour, cocoa, baking soda and salt. Add the dry mixture into the butter + sugar mix. Fold in the zucchini. Dump into your prepared pan. It will be dry, don't worry - it WILL turn out! Bake for 25 -30 minutes. Cool and eat!

Zucchini lasagna. Calabacitas. Make zucchini bread/muffins & freeze them for those dreary January days. Baked stuffed zucchini (for those big ones). Toss zucchini, sweet peppers, onion and cooked andouille sausage together with some olive oil and bake for 20 minutes in a 375 oven. Zucchini peanut butter chip cookies! Zucchini fish tacos. Zucchini, spinach and ham calzones.

Wow, now I wish my zucchini plants hadn't died in the move. It's such a versatile vegetable because the flavor is mild. Happy cooking!

Thanks for the recipe! I'm not a huge zucchini fan but we get a lot of it from our CSA so it is always great to have new things to do with it. Can't go wrong with brownies!

Wow! Your garden looks great. How on Earth did you do it??? I planted a couple small veggie gardens this year and they were killed by zuchinni bugs, those dirty buggers killed everything! Are you doing any canning? Oh how I wish my thumbs were as green as yours! Congrats!!!

I am also looking that those cute bags your Cutie is toting around.....

this is showing my garden skillz: we had all kinds of surpise things growing where we HAD our compost, wich included what we thought might have been pumpkins...they looked like one of your pics above...we really weren't sure what the heck they were, so we picked them and whaddyaknow? Pumpkins, they were! Prematurely grown, mind you, but pumpkins all the same!
